The concept of fusion started to become popular when Europeans first got a whiff of aromatic and mouth-watering spices from Asia in the Middle Ages. Soon after, the Europeans fell victim to the haunting and bewitching aromas dispersed by the spices, which then caused them to wage wars, plunder nations and even spread the bubonic plague, but that is another dark topic.

Most of the dark history snippets mentioned above have arisen due to the wonders of the fusion between spices and food culture. Five centuries later, the peoples of the world have moved on and put the concept of “Fusion Food” on a gastronomic pedestal. From the strange to the eloquent, artistic approaches are expressed through culinary art.

Arpon Changma, the chef of BBQ Express, is one of those individuals who constantly pushes culinary boundaries with his maverick approach to his creation. The creation of BBQ Express took place during the pandemic when Arpon and his friends tried their ready-made restaurant idea. A seasoned cook, Arpon conducted his research at various levels for his vision of the food that BBQ Express was ready to deliver.

Comprising a fixed palate that Dhakaites are used to, Arpon and his team poured a lot of brains and technique into their concept of fusion cuisine. Unlike other restaurants with the term “BBQ” in their name serving only kebab, BBQ Express focuses on providing a true barbecue experience with a twist. That is, by unifying three different cultures; Texan, Chittagong Hill Tracts and Dhaka.

As one of their priorities is to promote local ingredients and produce, the BBQ Express team says you can create world-class fusion cuisines with what we grow and raise in our country. “We taught and trained local butchers here to cut precise cuts for breasts and ribs. Not only did it make them more skilled, but it also increased their business growth potential,” Arpon said.

Adding to this point, Arpon also said, “We are trying to debunk the misconception that top quality kitchens are produced by imported products.” He continued, “At the end of the day, the products you get here will be fresher than imported products, and that’s what we try to promote. Our culture, our products and our spices!”

Just seven months into the game, BBQ Express has received rave reviews from its customers. If one was looking to try something from their menu, the crab fingers, breasts and smoked beef rice bowl are just amazing! For desserts, Arpon’s creation, Pagla Pani x Litchi Sorbet will not only refresh you on a summer night, but will also revive your palate with flavors that can only be understood after eating it.
